To start things off, I’m sharing this recipe that celebrates deliciously sweet, juicy summer peaches with this Summer Peach, Tomato & Virginia Ham Salad. It’s refreshing yet satisfying and comes together in less than 15 minutes!

Summer Peach, Tomato & Virginia Ham Salad

A simple yet satisfying salad that requires no cooking and features fresh summer peaches and tomatoes.

ingredients:

For the Salad
For the Dressing
  • 1 small jalapeño, seeds removed and minced (optional)
  • 1 tablespoon honey
  • 2 tablespoons apple cider vinegar
  • 1/4 teaspoon sea salt
  • 1/4 cup olive oil

instructions:

How to cook Summer Peach, Tomato & Virginia Ham Salad

  1. Arrange the lettuce in a large bowl and top with the cubed ham, sliced peaches, tomatoes and mint leaves. 
  2. To prepare the dressing, add the jalapeño (if using), honey, apple cider vinegar and sea salt in a small jar or bowl. Lightly whisk together. Add in the olive oil and shake or whisk well to combine. 
  3. Pour the dressing over the salad and enjoy!

NOTES:

If you like a little spice, you can always add some of the seeds of the pepper to your dressing to amp up the heat!
