To me, most protein powders taste chalky and artificial, however, this vegan & gluten-free blend has just the right amount of sweetness and a delicious vanilla chai flavor. I’ve loved adding it to my smoothies, oatmeal and this banana bread.

Chai Spiced Banana Bread

Serves: 6-8

Time: 1 Hour

Ingredients:

For the Banana Bread

4 ripe bananas

1/3 cup maple syrup

1/2 cup unsalted butter, melted & cooled

2 large eggs, beaten

1 teaspoon vanilla extract

1 1/3 cups all-purpose flour

2/3 cup whole wheat flour

2/3 cups Bob’s Red Mill Chia Protein Powder

1 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground ginger

1/4 teaspoon ground cardamom

1/4 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon ground allspice


For the Chai Sugar Topping

1/4 cup light brown sugar

1/4 teaspoon ground ginger

1/4 teaspoon ground cardamom

1/4 teaspoon ground cinnamon

Pinch ground cloves

Pinch ground allspice

Instructions:

1. Preheat your oven to 350F and grease a 4x8 inch loaf pan.

2. In a large bowl, mash three of the bananas well with a fork or a whisk. Whisk in the melted butter, maple syrup, eggs and vanilla extract. Set aside.

3. In a separate large bowl, mix together the all-purpose flour, whole wheat flour, Bob’s Red Mill Chai Protein Powder, baking soda, salt, ground ginger, ground cardamom, ground cinnamon, pinch cloves and pinch of allspice.

4. Add the dry mixture to the mashed banana mixture and stir to combine well. Pour the batter into the pan.

5. In a small bowl, combine the ingredients for the Chai Sugar Topping. Sprinkle the sugar mixture over the top of the batter. Split the remaining banana in half lengthwise and nestle each half, cut side up, into the batter.

6. Bake the banana bread for 50-55 minutes or until a toothpick or cake tester inserted into the center comes out clean.

7. Remove the banana bread and let cool for 5 minutes in the pan. After 5 minutes, remove from the pan and let cool completely on a wire rack before serving.
